BLACK EYED PEAS AND SPINACH 
1 med. onion
1 - 2 tbsp. oil
1 pkg. frozen chopped spinach
1 can black-eyed peas
Salt and pepper to taste

Saute diced onion in oil. Defrost spinach in microwave; add to onion. Drain black eyed peas and add to spinach; blend until warm. Add salt and pepper to taste. Excellent for Lent.

Since microwave ovens vary in power, you may need to adjust your cooking time.
