BLACK-EYED PEAS WITH GREEN SNAPS | |
4 lbs. fresh black-eyed peas (see instructions below) 1 tsp. lemon juice 1 tsp. seasoned salt 1/4 tsp. pepper Dash cayenne pepper 1/4 lb. chunk salt pork Select 3/4 of the black-eyed peas in very full pods for shelling. Select 1/4 of them very green, unfilled pods for snapping. Shell peas and rinse. Wash and snap peas. Remove stem ends. Snap peas. Cover peas with boiling water. Add lemon juice and seasonings. Place salt pork in pot. Bring to boil. Simmer for 2 1/2 hours. Add water if needed. Serves 6. |
