BARLEY CASSEROLE | |
1 c. chopped onions 1/2 lb. sliced mushrooms 1 c. pearl barley 4-5 tsp. butter 1 c. water 1 can consomme (beef) Brown barley in butter. Add onions and mushrooms; saute. Place mixture in buttered casserole dish. (No salt or pepper.) Mix 1 cup water and 1 can consomme. Pour 1 cup liquid over barley mixture. Bake covered at 350 degrees for 30 minutes. Add remaining liquid and cook uncovered for 20-30 minutes more or until done. |
