BEEF BARLEY CASSEROLE 
3/4 c. barley
4 c. boiling water
1 tsp. salt
1 lb. ground beef
1 onion, chopped
2 tsp. Crisco
1 sm. can peas
1 can tomato soup
2 c. diced celery
1 sm. green pepper, chopped
1/2 tsp. pepper
1 (4 oz.) can mushrooms

Soak barley overnight. Drop soaked barley in boiling water and cook until tender. Brown beef, onion, green pepper and celery. Mix in peas, mushrooms and barley. Place meat mix in 9"x13" pan. Spread soup mix over top. Cover. Bake at 350 degrees for 1 hour. Sprinkle with water if it appears to be drying out.
