BEEF BARLEY SOUP | |
1 lb. beef shanks 6 med. potatoes, peeled & quartered 1 pt. tomatoes, peeled & diced 1/2 c. barley 6 carrots, cut in 1/2" pieces 6 celery sticks, cut in 1/2" pieces 1 lg. yellow onion, quartered Salt to taste 1 tsp. pepper 6-8 c. water Place water, salt, pepper, beef and onion in 6 quart saucepan. Simmer for 1 to 2 hours or until meat is tender. Add barley and tomato and simmer for 1 hour. Add potatoes, carrots and celery and cook until tender. |
