BARLEY CASSEROLE 
1 c. pearled barley
1 onion, chopped
1/2 lb. fresh mushrooms, chopped
4-5 tbsp. butter
2 c. chicken broth

Saute onions and mushrooms in butter until soft. Add barley and brown lightly. Pour 1 cup chicken broth over mixture. Bake in covered casserole at 350 degrees for 30 minutes. Add remaining chicken broth. Continue cooking until liquid is absorbed and barley is soft, approximately 1 more hour. Serves 4-6.
