CAULIFLOWER POLONAISE 
1 head cauliflower
Lemon juice
6 tsp. oil
2 tsp. butter
3 tbsp. bread crumbs
2 tsp. onion, chopped
3 eggs, boiled & finely chopped
Salt
Pepper

Remove outermost leaves. Place in water in saucepan. Season with salt and lemon juice. Boil until tender.

Sauce: Heat oil and butter in pan. Add bread crumbs and chopped onion. Cook for 1 minute. Add eggs, salt and pepper. Cook 1 more minute. Remove cauliflower to serving bowl. Spread with sauce.
