FRESH APPLE CAKE 
4 c. McIntosh apples, cubed
1 tsp. vanilla
3/4 c. Crisco oil
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 eggs
2 c. sugar

Combine cubed apples, Crisco oil and vanilla. Sift together flour, baking powder, baking soda, salt and cinnamon.

In large bowl, beat eggs thoroughly. Add sugar and beat well, then add all dry ingredients and apple mixture. Batter will be very thick. Just be sure it's well blended.

Bake in a 350°F oven in a greased and floured tube pan or Bundt pan for about 1 hour.
