MUSHROOM AND BARLEY CASSEROLE 
1/2 c. butter
1 onion, finely chopped
1 lb. fresh mushrooms, sliced
1 1/2 c. barley, uncooked
2 c. chicken broth
Salt and pepper to taste (1 tsp. salt)

Preheat oven to 350 degrees. Melt butter in large skillet. Add onion and mushrooms. Saute until golden. Add barley. Cook until browned. Pour into covered 2 quart casserole. Add chicken broth, salt, and pepper. Cover and bake for 1 hour.
