BEEF AND BARLEY CASSEROLE 
1 lb. ground beef or turkey
1/2 c. chopped onion
1 can (15 oz.) tomato sauce
1 c. water
1/2 c. barley
1 c. shredded cheddar (4 oz.)
1/2 to 1 tsp. chili powder
(Can substitute: 2 cloves garlic, 1/2 tsp. parsley, 1/8 tsp. oregano, 1/4
tsp. basil for chili powder).

Preheat oven to 375 degrees. In skillet brown meat with onion. Drain fat. In large bowl, combine meat with tomato sauce, water, barley, seasoning choice; mix well. Put in 11x7 baking dish. Cover and bake about 1 hour or until barley is tender. Uncover; stir casserole. Sprinkle cheese on top and continue baking until cheese melts.
