BARLEY CASSEROLE 
1/2 c. butter (1 stick)
2 med. onions, chopped
3/4 lb. mushrooms, sliced
1 1/2 c. barley
2 c. chicken stock
Salt & pepper to taste

Preheat oven to 350 degrees. Melt butter in large skillet over medium-high heat. Add onion, mushrooms and barley and saute until tender, about 5 to 10 minutes. Turn into a shallow 2 quart baking dish. Blend in stock and season. Cover and bake 50 minutes. Uncover and bake until all liquid is absorbed about 10 minutes.
