LOUISIANA PRALINE, YAM AND PECAN
DESSERT CASSEROLE
 
4 med. Louisiana yams, cooked, peeled & quartered (or 2, 16 oz. cans)
1/2 c. firmly packed dark brown sugar
2 eggs
1/3 c. melted butter
1 tsp. salt
1/2 c. pecan halves

Mash yams in a large bowl. Beat in eggs, 1/4 cup of the sugar, 2 tablespoons melted butter and salt. Turn into a 1 quart casserole. Arrange pecan halves on top, sprinkle with the remaining 1/4 cup sugar and drizzle with the remaining melted butter. Bake, uncovered, in a 350 degree oven for 20 minutes. Serve warm with orange sauce. Serves 6.
