COAL MINERS SOUP 
1.5 lbs. Ekrich smoked sausage, cut up
5 c. water
2 cans kidney beans, drained
2 carrots, diced
Half head of cabbage, chopped
2 potatoes, diced
1 onion, chopped
1/2 of a green pepper
1 clove garlic
1 (8 oz.) can tomato sauce

Simmer sausage in 2 cups of water for 30 minutes. Add 3 cups of water and the rest of the ingredients. Simmer until the carrots, potatoes and cabbage are tender.
