SWEET POTATO SOUFFLE 
2 eggs
4 med. cooked potatoes
1/2 c. light corn syrup
1/2 stick butter
1 tsp. cinnamon
1/2 c. pecan meats
1/2 c. sugar
1/2 tsp. nutmeg

Whip cooked potatoes until creamy. Combine all ingredients, except pecans. Add pecans last and pour into baking dish. Place marshmallows over top. (I wait until the mixture cooks a while and then add marshmallows over top.) Bake at 300 degrees until browned.
