WHITE CHOCOLATE PEPPERMINT
PUDDING COOKIES
 
3/4 cup (1 1/2 sticks) butter
1 cup sugar
1 (3 oz.) pkg. vanilla instant pudding mix
1 tsp. vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 cup white chocolate chips
1 cup crushed peppermints (or peppermint baking chips)

Preheat oven to 350°F.

Cream butter and sugar. Mix in dry instant pudding and vanilla. Beat in eggs. Stir in flour, baking soda, chocolate chips and crushed peppermints (or peppermint chips). Roll into 1-inch balls. Place on greased baking sheet.

Bake at 350°F for 10 minutes.
