BANANA FRUIT BREAD 
1/2 c. shortening or butter
2/3 c. sugar
3/4 tsp. grated lemon rind
1 or 2 beaten eggs
1 to 1 1/4 c. bananas, mashed
1 3/4 c. flour
2 1/2 tsp. double baking powder
1/2 tsp. salt
1/2 c. chopped nuts and/or 1/4 c. chopped apricots

Preheat oven to 350 degrees. Mix the first 5 ingredients in order. Add the sifted dry ingredients, a little at a time. Beat the batter after each addition until smooth. Fold in nuts or apricots. Place batter in greased bread loaf pan. Bake about 1 hour or until done. Cool before slicing. You may add grated carrot, cinnamon, vanilla, nutmeg, currants and/or crumbled cereal for variety.
