CRANBERRY BREAD 
2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 tbsp. melted shortening
about 2 tbsp. boiling water
1 egg well beaten
1/2 c. chopped nuts-optional
1 1/2 c. chopped cranberries (measure before chopping)
juice and rind from 1 orange

Sift dry ingredients together. Pour orange juice into a measuring cup add rind and melted shortening and enough water to make 3/4 of a cup. Combine orange juice mixture and beaten egg. Stir liquid into dry ingredients just until moistened. Fold in cranberries and nuts and pour into a greased loaf pan. Let stand for 20 minutes before baking.

Bake in a 350°F oven for 50-60 minutes.
