CRANBERRY HOLIDAY PUDDING | |
1 1/4 c. washed raw cranberries 1 1/2 c. Bisquick 1/2 c. sorghum or molasses 1/2 c. warm water 2 tsp. baking soda VANILLA OR RUM SAUCE: 1 c. sugar 1/2 c. cream or rich milk 1/2 c. butter, melted 1 tsp. vanilla or rum flavoring Mix cranberries and Bisquick in bowl. Mix sorghum, water, soda in 2 cup measuring cup. Combine the 2 mixtures; mix well. Pour into greased and floured 1-quart mold or 2 pound coffee can (2/3 full). Tie wax paper loosely over top. Steam 2 1/2 to 3 hours. Unmold onto serving platter. Serve hot with hot easy vanilla or Rum Sauce. VANILLA OR RUM SAUCE: Mix sugar and cream. Heat but do not boil. When ready to serve, beat in butter with rotary beater. Stir in flavoring. Can be served flaming. Soak one or two sugar cubes in lemon extract. Place on top of mold; light with match and serve. 8 servings. |
