SQUASH ONION PICKLES | |
4 c. sliced squash 1 c. sliced onions 1 bell pepper 1 1/4 c. sugar 1/2 c. vinegar 1/4 tsp. celery seed 1/4 tsp. mustard seed Soak squash and onions in 2 tablespoons salt for 1 hour (covered in cold water). Drain and rinse in cold water, drain again. Mix sugar, vinegar and seeds. Bring to boil. Add squash, onions and pepper and bring to a boil again. Pack loosely in jars and seal. |
