SQUASH - ONION CASSEROLE 
3 c. cooked, cubed squash
1/2 c. onion, chopped
1 c. bread crumbs
1/2 c. milk
3 tbsp. butter, melted
2 eggs, beaten
1 tsp. Italian seasoning
Salt & pepper to taste
3 slices bacon, crisply fried & crumbled
1 c. grated cheese

Mix together thoroughly: squash, onion, bread crumbs, milk, butter, eggs, Italian seasoning, salt and pepper to taste. Pour into 2 quart greased casserole dish. Sprinkle crumbled bacon and grated cheese over top. Bake at 350 degrees for 45 to 55 minutes. Yield 6 servings.
