CREAM CHEESE SANDWICHES WITH
APRICOT SAUCE
 
1 (8 oz.) cream cheese
1/2 c. walnuts, chopped
1 tsp. vanilla
6 slices of stale soft bread

BATTER:

4 eggs, beaten
3/4 c. milk
1 tsp. vanilla
Pinch of nutmeg
3 tbsp. butter

SAUCE:

1 c. apricot preserves
1/3 c. orange juice
1 c. sliced banana or blueberries

Mix cream cheese, walnuts and 1 teaspoon vanilla and spread on 6 slices of bread. Put 2 slices together, filling side in. Beat batter ingredients until well mixed. Dip sandwiches in batter, coating both sides. Melt butter in skillet and fry sandwiches until golden brown on both sides. Warm apricot preserves with orange juice and beat to mix. Sprinkle fruit over sandwiches and pour sauce over all.
