CORN PATTIES 
2 c. corn
2 eggs, beaten
3/4 c. flour
1 tsp. salt
1/4 tsp. pepper
1 tsp. baking powder

Cut tips of kernels from cob with sharp knife; scrape cob with dull edge. Add eggs and dry ingredients sifted together. Drop from tablespoon into 1/2 inch of hot fat in electric frying pan at 380 degrees. Fry until golden brown, turning once. Serve with butter and maple syrup. Yield 12 patties.
