SALMON CROQUETTES 
2 tsp. butter
2 med. onions, minced
2 (16 oz.) cans salmon, skinned & flaked
2 eggs, beaten
1 1/3 c. crackers, ground fine or cracker meal
Ground black pepper to taste
2 c. vegetable oil

Heat butter and saute onion about 4 minutes. Transfer to large bowl and cool slightly. Stir in salmon, eggs, 2/3 cup cracker meal and 1/2 teaspoon black pepper. For 12 rounds 2 1/2" dredge in remaining cracker meal and fry at 365 degrees. Drain on paper towels.

For a little extra punch - try reserving the salmon juice and making a "white" sauce out of the reserved juice with a little lemon and the juice from a can of peas - Use the peas for a side dish.
