SPECIAL SWEET POTATO CASSEROLE 
4 c. hot mashed sweet potatoes
1/3 c. + 2 tbsp. butter
2 tbsp. sugar
2 eggs, beaten
1/2 c. milk
1/3 c. chopped pecans
1/3 c. flake coconut
1/3 c. brown sugar, packed
2 tbsp. flour

Mix sweet potatoes, 1/3 cup butter and sugar. Beat in eggs and milk. Pour mixture into a 1 1/2-2 quart casserole. Combine pecans, coconut, brown sugar and flour. Stir in 2 tablespoons melted butter. Sprinkle mixture over sweet potatoes. Bake at 325 degrees for 1 hour. Makes 6-8 servings.
