SWEET POTATO CASSEROLE | |
1 (40 oz.) can sweet potatoes, drained & mashed 2 eggs 1/2 stick (4 tbsp.) butter 1/3 c. sweetened condensed milk 1 c. corn flake crumbs 1/2 stick butter (4 tbsp.) (additional) 1 1/2 c. sugar 1/2 c. coconut 1/2 c. chopped pecans Combine mashed sweet potatoes, eggs, sugar, 1/2 stick butter and sweetened condensed milk. Mix until well blended. Spray inside of two quart casserole with non-stick vegetable cooking spray. Turn sweet potato mixture into casserole and bake 15 minutes in a 350 degree oven. Combine corn flake crumbs, coconut, pecans and remaining 1/2 stick butter. Sprinkle over top of casserole. Return to oven and bake 15 minutes longer or until light brown. |
