SWEET POTATO CASSEROLE | |
2 lg. sweet potatoes, boiled 1/4 c. brown sugar 1/4 c. melted butter 1 egg 1/4 tsp. vanilla 1/2 tsp. cinnamon TOPPING: 1/4 c. coconut 1/4 c. brown sugar 1/4 c. chopped pecans 2 tbsp. flour 1 tbsp. melted butter 1/4 tsp. cinnamon Mash cooked sweet potatoes. Combine with brown sugar, butter, egg, vanilla and cinnamon. Pour into greased 9 x 13 x 2 inch baking dish. Mix ingredients for topping. Crumble over top of casserole. Bake at 375 degrees for 30 minutes. |
