EASIER THAN PIE PECAN PIE
3 large eggs
1/2 cup sugar
1 cup maple syrup
3 tbsp. butter, melted
1/2 tsp. vanilla extract
1/4 tsp. salt
2 cups pecan halves
Whipped cream (optional)

Preheat oven to 375°F.

Roll out dough to fit a 9-inch pie pan. Transfer pie crust to pie pan. Trim 1 inch beyond the edge of the pie pan and flute edges.

In a bowl, whisk eggs and sugar until smooth. Add maple syrup, butter, vanilla, salt and pecans. Pour into the prepared crust.

Bake for 30-40 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour.

I got this recipe from a magazine I saw at work one day and it's delicious and simple as can be. I made one of these at a meal at my church once and everyone loved it and asked for the recipe. Even though I could have simply looked up a recipe online instead of buying the magazine (which had cost a little more than I anticipated) it’s still worth the price.
