SWEET POTATO CASSEROLE | |
1 (2 1/2 lb.) can sweet potatoes 1 c. sugar 1/4 c. butter 2 eggs 1/2 tsp. salt 1 tsp. vanilla extract 1/2 tsp. cinnamon 1/2 tsp. nutmeg Drain the canned sweet potatoes. Now beat all the ingredients together in your electric mixer or food processor until smooth. Pour mixture into greased 2 quart casserole. Prepare the following topping: 1 c. shredded coconut 1 c. firmly packed brown sugar 1/3 c. flour 1 c. chopped nuts 1/4 c. melted butter Mix all the ingredients together and spread on top of the casserole of sweet potatoes. Bake for about 30 minutes at 350 degrees. Serve hot to 6 to 8 persons. |
