SPANISH RICE 
4 slices bacon, cut into 1-inch pieces
1 sm. onion, sliced (1/4 c.)
1 (about 5 oz.) pkg. pre-cooked rice
1 (12 oz.) can V-8 mixed vegetable juice

Fry bacon pieces in medium frying pan until about half cooked. Add onions and saute in bacon fat until soft. Stir in rice; slowly stir in mixed vegetable juice. Heat to boiling; cover; remove from heat; let stand in warm place until rice is tender and liquid is absorbed. Makes 3 to 4 servings.
