CRACKLIN' BREAD 
3/4 c. diced slab bacon
2 c. corn meal
2 tsp. baking powder
1 c. buttermilk
2 eggs, well beaten

Preheat oven to 425 degrees. Grease a 10 inch pie plate. Fry bacon in a large, heavy skillet until crisp; drain. Reserve 1/4 cup drippings. Combine corn meal, baking powder, buttermilk, and eggs in a deep mixing bowl. Stir in drippings and bacon. Mound batter into prepared pie plate. Bake for 20 minutes or until a cake tester inserted in center comes out clean.
