DIETETIC FRUIT CAKE | |
1/2 c. shortening 1 tbsp. peanut butter 2 lg. (3 sm.) eggs (an egg sub. will work) 1 c. oatmeal 1 tsp. baking soda 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. cloves 1 c. flour 1 c. sugar-free applesauce 2 tbsp. liquid sugar substitute 1 banana, crushed 1/2 c. white raisins 1/2 c. nuts, chopped Cream shortening and peanut butter. Add eggs; beat well. Add oatmeal, soda, salt, cinnamon and cloves. Beat in flour, applesauce, sweetener, banana, raisins and nuts. Bake at 300 degrees for 1 1/2 hours in well greased loaf pan. During the last half hour of baking, cover with foil to avoid drying. Wrap well and store in refrigerator. |
