LOTS O APPLE CAKE 
1 1/3 c. Pillsbury's Best all-purpose or unbleached flour
1 c. Pillsbury Best whole wheat flour or bran oat meal
1 1/4 c. sugar
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
5 c. (5 med.) thinly sliced peeled apples
1/2 c. oil
1/4 c. honey
1 tsp. vanilla
2 eggs or 1/2 c. frozen cholesterol-free egg product, thawed
1/2 c. chopped nuts

Heat oven to 350 degrees. Grease and flour bottom only of 13 x 9 inch pan. Lightly spoon flour into measuring cup, level off.

In large bowl, combine all ingredients except nuts; blend at low speed until moistened. Beat 2 minutes at medium speed. Stir in nuts. Spread in greased and floured pan. Bake at 350 degrees for 40-50 minutes or until toothpick inserted in center comes out clean. Serve warm or cool. Store cake in refrigerator. 12 servings.

High Altitude - above 3500 feet. Increase all purpose flour to 1 1/3 cups plus 2 tablespoons. Bake as directed above.
