APPLE WALNUT CAKE | |
4-5 c. coarsely chopped peeled apples 1 3/4 c. sugar 2 eggs 1/2 c. oil 2 tsp. vanilla 2 c. sifted flour (I usually use 1 c. white and 1 c. whole wheat) 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1/2 c. chopped walnuts Combine apples and sugar. In another bowl mix eggs, oil and vanilla and beat 1 minute. Add combined dry ingredients alternately with apple mixture. Stir in walnuts. Bake in greased and floured 9x13 pan at 350 degrees for 45-50 minutes or until cake tests done with toothpick. Serve plain or frost with cream cheese frosting. FROSTING: 8 oz. cream cheese at room temperature 8 oz. confectioners sugar 1 tbsp. cream or half and half Mix all ingredients well. (Food processor works well.) |
