FRESH APPLE WALNUT CAKE 
2 c. granulated sugar
3 c. all-purpose flour
2 tsp. salt
2 tsp. baking soda
2 tsp. ground cinnamon
4 eggs
1 1/2 c. vegetable oil
2 c. chopped walnuts
4 c. peeled, chopped apples (cut into chunks, not finely diced)

Mix sugar, flour, salt, baking soda and cinnamon. Add eggs and oil; beat with a wooden spoon. Add nuts and apples. Batter will be thick and hard to mix after the apples are added.

Spread batter in a greased and floured bundt pan. Bake in a preheated 350 degree oven 1 hour. Let set in oven if not completely done for 15 minutes. Don't overbake. (I use large chunks of apples and whole or half walnuts.)
