APPLE WALNUT CAKE | |
3 eggs, beaten 2 c. sugar 1/2 c. vegetable oil 2 tsp. vanilla 2 c. all-purpose flour 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt 4 c. diced apples, unpeeled 1 c. coarsely chopped walnuts In a large mixing bowl, beat together eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt. Mix into batter. Fold in apples and nuts. Spread into a greased 9 x 13 x 2 inch baking pan. Bake at 325 degrees for 50 - 60 minutes or until cake tests done. Cool ICING: 2 (3 oz.) pkg. cream cheese, softened 1/4 c. butter 1 1/2 c. confectioners sugar 1/2 tsp. vanilla Combine all ingredients in a small bowl. Whip until smooth and spread over cake. |
