APPLE COFFEE CAKE 
1/4 c. sugar
1/2 c. chopped walnuts
1 tsp. cinnamon
1/3 c. butter
3/4 c. sugar
2 eggs
2 c. sour cream (or yogurt, if preferred)
1 c. whole wheat flour
1 c. white flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
3 med. apples (3 c.), pared and diced

Combine first three ingredients for topping and set aside.

Cream butter and sugar. Add eggs and sour cream, beating well.

Mix the dry ingredients and add.

Using a 10 inch tube pan, spread 1/2 the batter in the pan and sprinkle with 1/3 of the topping. Arrange the apples on the topping. Sprinkle with 1/3 of the topping. Pour remaining batter over and sprinkle with remaining topping. Bake at 375 degrees for 35-40 minutes. Serves 12.
