MEAT ROLL 
1 1/2 lbs. hamburger
1 med. onion, sliced
1 tsp. salt
1/4 tsp. pepper
2 c. Jiffy mix
1/2 c. milk

Brown hamburger, onion, salt and pepper. Drain fat. Mix together Jiffy mix and milk. Roll into rectangle on floured surface. Cover with meat. Roll as for jelly roll. Place on greased baking sheet seam side down, slash top several times. Bake 20 to 25 minutes at 400 degrees. Serve with gravy, tomato or mushroom sauce. 6 servings.

My family likes this but usually I fix it using coarsely ground ham and drained crushed pineapple, served with chicken gravy. My family loves the ham version. I first tasted it in our high school cafeteria in the late 60's. I was so glad a few years after high school to get the recipe from a retired cafeteria worker. I have been fixing it ever since.
