MEAT ROLL 
Thin slice of round steak (about 10 to 12 inches wide)
1 1/2 c. plain bread crumbs
1 tbsp. grated cheese
1 tbsp. parsley
Salt and pepper, to taste
1 egg, beaten
1 hard-boiled egg
3 to 4 slices bacon
Carrot shavings
Mozzarella cheese slices, optional
Italian seasoning, to taste

Flatten round steak and season with salt and pepper. Place bread crumbs in a bowl, add grated cheese, parsley, salt, pepper, Italian seasoning and beaten egg. Mix together and spread mixture over the round steak.

Slice the hard-boiled egg and place on top; then place the bacon strips on top of entire mixture. Spread a few carrot shavings over mixture and place some thin slices of Mozzarella cheese on top. Roll the round steak and sew the ends of the roll with white thread; also wrap thread around roll in order to hold roll together. Brown the meat roll in a pan until golden brown. Place in simmering sauce and cook for 1 hour. Remove from sauce; let the roll stand for 20 minutes. Remove thread. Slice.
