DOUBLE CHEESE MEAT ROLL 
1 1/2 lbs. ground beef
1 egg
3/4 c. cracker crumbs
1/2 c. chopped onions
2 (8 oz.) cans tomato sauce with cheese
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 c. shredded Mozzarella or Cheddar cheese

Combine beef, egg, cracker crumbs, onion, 1/3 cup tomato sauce, salt, oregano and pepper. Mix well and shape into flat rectangle 10x10 inches on waxed paper. Sprinkle Mozzarella cheese evenly over meat mixture. Roll up like a jelly roll and press ends of roll to seal. Bake in shallow dish at 350 degrees 1 hour. Drain excess fat. Pour remaining tomato sauce over roll and bake additional 15 minutes.

I've been using this recipe since I found it in a magazine in 1967. I've tweaked it a bit to my families taste but it's their all-time favorite meatloaf. I have to make at least two so we have leftovers for sandwiches. I was glad to find it on here as my cut-out from the magazine is getting very hard to see. Thanks for posting it.
