CORNED BEEF WITH HORSERADISH
CREAM SAUCE
 
Prepare large corned beef as directed and serve with Horseradish Cream Sauce.

HORSERADISH CREAM SAUCE:

3/4 c. heavy cream
1/2 c. mayonnaise
1/2 c. prepared horseradish, drained
2 tbsp. Dijon mustard
Pinch sugar
Salt and pepper to taste

Whip cream in bowl until it forms soft peaks. Combine mayonnaise, horseradish and mustard in another bowl. Fold in whipped cream with rubber spatula. Add sugar, salt and pepper. Stir well and transfer to serving bowl. Yield: 2 cups. (Also great with filet of beef.)
