QUICHE LORRAINE 
Pastry for 9" (1 crust) pie
12 slices bacon, crisply fried & crumbled
1 c. shredded natural Swiss cheese (about 4 oz.)
1/3 c. minced onion
4 eggs
2 c. whipping cream
3/4 tsp. salt
1/4 tsp. sugar
Pepper to taste

Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese and onion in pastry lined pie pan. Beat eggs slightly. Beat in remaining ingredients. Pour cream mixture into pie pan. Bake 15 minutes. Reduce oven temperature to 300 degrees and bake 30 minutes longer or until knife inserted 1" from edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges (6 main dish or 8 appetizer servings).
