QUICHE LORRAINE | |
Plain pastry for 9 inch pie 1 tbsp. bacon drippings 1 c. onion, thinly sliced 1 1/2 c. Swiss cheese, cubed 4 slices crisp bacon 4 eggs, beaten lightly 1 1/2 c. half & half 1/2 tsp. salt 1/4 tsp. nutmeg 1/4 tsp. white pepper Heat oven to 450 degrees. Line a 9 inch pie plate with pastry and bake 5 minutes. Remove from oven. Cook onions in bacon drippings until they are transparent. Cover bottom of pastry with cheese, onion and crumbled bacon. Combine remaining ingredients and pour over onion and cheese. Bake in the very hot oven (450 degrees) for 10 minutes, then reduce heat to moderate (350 degrees) and bake 20 to 25 minutes more. Test for doneness by inserting a knife tip in the center. Quiche is done if knife comes out clean. |
