MARINATED VEGETABLES 
Fresh broccoli
Fresh cauliflower
Carrots, peeled and sliced
Fresh mushrooms, cleaned and sliced
Onion, peeled and chopped
Squash (zucchini and yellow), sliced with skin on
Cucumber, chopped
Bell pepper, chopped
Black olives
Green olives with pimento
1 lg. bottle Italian dressing (I use Newman's own)

Put chopped, sliced vegetables in a large serving bowl. Pour Italian dressing over vegetables and allow to marinate overnight in refrigerator. Stir several times.

NOTE: Use any fresh vegetables you might like. This recipe is very colorful and makes a nice addition to any meal or buffet.
