PINEAPPLE CHICKEN SALAD 
6 slices chilled, drained pineapple
3 c. cooked chicken
2 c. bias-sliced celery
2 tbsp. chopped candied ginger
1/2 c. mayonnaise
1/4 c. sour cream
2 tsp. lemon juice
1 c. almonds
Salt and pepper

On lettuce leaf, place ring of pineapple. Combine first 3 ingredients. Mix the mayonnaise, sour cream, and lemon juice and pour over chicken, celery and ginger; toss well. Add salt and pepper for seasoning, and the almonds. Heap a serving on pineapple slice.
