PURE FRUIT COOKIES 
3 very ripe bananas
1/4 c. peanut or safflower oil
1/8 tsp. salt (optional)
1 tsp. vanilla extract
1 1/2 c. rolled oats
1/2 c. oat bran
1 1/2 c. dried fruit (raisins, chopped dates or any kind fruit, any combination)
1/2 c. chopped walnuts or almonds

1. Lightly oil 2 baking sheets. Preheat oven to 350 degrees F.

2. Mash bananas well in a mixing bowl. Add oil, salt and vanilla and mix.

3. Add oats, oat bran, fruit and nuts and mix well.

4. Drop by rounded tablespoons on baking sheet, flattening the batter slightly with the back of the spoon.

5. Bake for 20 to 25 minutes or until lightly browned. Turn out on wire rack to cool. Store in refrigerator after first day. Yield: 24 cookies.
