PURE FRUIT COOKIES 
Yield: 24 cookies. Preparation time: 20 minutes. Cooking time: 20 minutes.

3 very ripe bananas
1/3 c. peanut or safflower oil
1/8 tsp. salt (optional)
1 tsp. vanilla extract
1 1/2 c. rolled oats
1/2 c. oat bran
1 1/2 c. dried fruit (raisins, chopped dates, or other dried fruit, in any combination)
1/2 c. chopped walnuts or almonds

1. Oil 2 baking sheets. Preheat oven to 350 degrees.

2. Mash bananas well in a mixing bowl. Add oil, salt, and vanilla and mix.

3. Add oats, oat bran, fruit, and nuts and mix well.

4. Drop by rounded tablespoons on the baking sheets, flattening the batter slightly with the back of the spoon.

5. Bake for 20 to 25 minutes or until lightly browned. Turn out on wire racks to cool. Store in refrigerator after first day.
