GAMEDAY CHILI - HOT? NOT? BRING ON THE WIN | |
ground beef salt and pepper 2 pkgs. chili seasoning (I use store brand) chick peas (better known as garbanzo beans) black beans dark red kidney beans light red kidney beans chili powder (cheap spice) granulated sugar (to take out the bite) jalapeno, seeded and diced bell pepper (your choice of color) 1 large can diced tomatoes (store brand works well) 1 small can tomato sauce or paste garlic, fresh onion powder garlic powder 1/4 cup V8 juice Brown meat and garlic cloves. As sizzling, add onion powder and garlic powder, salt and pepper. Chop meat so the pieces aren't too big. As the skillet is doing it's work, it's time for continuation. I start first with the bell pepper. I cut it and discard the seeds and veins. I then dice (not perfectly of course but it really doesn't matter because they will cook down). I throw them into the stock pot. I grab the jalapeno and throw on a pair of disposable gloves so as to not get jalapeno oil onto my hands and fingers. I have done that before and got some in my eye. NOT FUN and it takes a while to get out. I drain all cans except for the tomato products. I just started rinsing the beans with my strainer. After the ground beef has finished cooking i break it up some to make more bite size pieces and throw it on top of the peppers, beans, tomato products and envelopes of chili spice. By this time i hope you have an extra packet in your stash because it might not be spicy enough, in case you don't, that's where the chili powder comes in. I also add the sugar. To give it just the right amount of oomph of sweetness. I throw it on the stove top on low of course because that simmering all day long to create just the right texture, taste and mouth watering fullness is what all the hubby's friends crave while watching a little pig skin. Make sure you have enough because the bowls have to run bottomless. Extra toilet paper on hand? A must. NOTES: ~ A loaf of nice quality extra crusty bakery bread and homemade garlic butter or olive oil. ~ Pairs well with a finger food appetizer of hot pepper skins that burn your lips (I realize they can be pretty pricey by the bulk so I buy the jalapenos by the bag. Be on the lookout for that appetizer recipe. I have given it out to fathomless people. And now their staple. ~ Fresh not opened gallon of whole milk... It will help with the burning of the lips.
