BAKED ZUCCHINI 
3 lb. zucchini or yellow summer squash
1 yellow onion
Parsley
3 to 4 tbsp. Bisquick
Salt and pepper to taste
3 eggs, beaten
Grated cheese to cover well

Use a 9x13 inch greased casserole. Cut off the ends of zucchini and wash, but do not peel. Grate zucchini, onion and parsley. Add flour, salt, pepper, and eggs; stir well. Spread in flat, buttered baking dish and cover with cheese. Can be made a day ahead and chilled until ready to bake. Bake at 350 degrees for 40 minutes, uncovered.
