SQUASH BAKE 
1 (11 oz.) can condensed Cheddar cheese soup
1 (10 3/4 oz.) can condensed chicken and mushroom soup
1 med. zucchini, sliced 1/4 inch thick
1/3 c. chopped onion
2 lg. yellow squash, sliced 1/4 inch thick
2 oz. pepperoni, sliced
1/2 c. sliced mushrooms
1 c. shredded Cheddar cheese
1 c. Mozzarella cheese
1 (6 oz.) pkg. chicken flavored stuffing mix

In a 2 quart casserole, combine soups, zucchini, yellow squash, 1/2 of pepper, all of onion, all of mushrooms, 1/4 cup of each cheese. Bake at 325 degrees for 45 minutes or until squash is tender-crisp.

Meanwhile, prepare stuffing mix according to package directions. Top squash mixture with stuffing. Sprinkle remaining cheeses and pepperoni on top. Cover, cook 15 minutes more or until cheese is melted. 6-8 servings.
