BAKED SQUASH WITH CHEESE 
6 med. yellow squash
1 lg. onion, chopped
1 lb. cheese, grated
1 c. dry bread crumbs or seasoned crumbs

Cut the squash in 1/2 inch slices. Parboil or steam the squash 5 minutes. Drain and save any water for soups. Layer the squash, onion, and cheese in an oiled, shallow 2 quart dish. Place crumbs on top. Bake, uncovered, 45 minutes at 350 degrees. Serves 6.

To par-boil, barely cover vegetable with water and bring to a boil.
